Cheese & Bacon Dip in a Cobb Loaf

Who has that one awesome friend that ALWAYS shows up to the party with something brilliantly tasty in hand to feed the masses?!  I want to be that friend.  I really, really do...if only I had the right recipe.  Well guess what guys?  Now I do!  This is great news as it means that you too can be that mate with that dip that everyone is talking about for years after the party has been and gone! :)

I trawled the net and came across this recipe by member Jenny over at Recipe Community.  It's really easy and super tasty...here's how I approached it.

You could make your own cob loaf... but seriously, who has time for that with little kids in the mix.  One thing at a time people, one thing at a time!  We can't be expected to have the patience for both bread making AND dip making with kiddies now can we? ;) 

I bought my cobb from the local bakery - a wholemeal stone-baked cobb loaf. 

Now, we used a Thermomix to make the dip...but you don't have to.  It could all be done using super fine knife skills or a blender/food processor, with only one step requiring a frypan.

What you'll need

  • 200 grams of cheese - we used Colby
  • 3 spring onions - fortunately we have an abundance of these in the garden at the moment!
  • 4 rashers of bacon
  • 2-3 tablespoons of olive oil
  • 250g of philadeliphia cheese (the block, not the spreadable type)
  • 300 sour cream - we used the light one

What to do

  1. Cut the top off the cob loaf and then carefully hollow it out, bearing mind that you'll need to use the bread as dipping sticks, so try to keep them in fairly big chunks.
  2. Pop the cob and all the pieces of bread from the inside onto a baking tray and bake in oven at 180°C until the pieces are dried out and slightly browned. 

In the meantime:

  1. Grate the cheese. If using a Thermo, 5 secs, speed 6 (set aside).
  2. Finely chop spring onions. Thermo, 3 seconds speed 6 (set aside).
  3. Finely dice bacon. Thermo, 3 seconds speed 6.
  4. Fry off bacon in olive oil.  Thermo, 8 minutes, 100°C, speed 1, reverse.
  5. Combine all ingredients including philadelphia cheese and sour cream.  Thermo, 15 seconds, speed 3, reverse.
  6. Grab the cob loaf from the oven, set aside inside pieces.  Pop loaf onto some alfoil, pour in the dip mixture, wrap with alfoil and bake in 180°C oven for 1 hour.

If you're taking this to a party, bring some extra bread or carrot/celery sticks to ensure you have enough to feed all guests.  I'd suggest doing the final step (pouring it into loaf and baking) at the party premises as it tastes super awesome fresh from the oven.

SO there you have it guys - GO!  Be awesome!  get the party started with this amazingly tasty treasure! :)

 

Cheese and Vegemite Scrolls - "You Could Make them with your eyes closed"

Here's another super quick and easy, tasty snack that you can eat fresh from the oven or freeze for school lunchboxes! 

What's better than that?  You can do this one with the kids with very minimal mess and effort!

What's even BETTER than that?!  This recipe has only THREE ingredients!  WINNING!

Ingredients:

  • Puff pastry
  • Vegemite
  • Cheese (about a cup grated)

Method:

  • Take pastry out of the freezer so it starts to thaw
  • Preheat oven to 220°C
  • Grate the cheese into a bowl
  • Spread Vegemite using a knife or spatula to cover a sheet of pastry
  • Top with grated cheese
  • Roll into sausages
  • Cut into 2cm slices
  • Place on a lined baking tray and bake for 20 mins

 

TOO EASY!!  Be careful - they are moreish!!

 

PS - I allow them to cool and then individually wrap them in clingwrap and freeze for lunchbox snacks.  They can be placed in the lunchbox frozen and will defrost in time for morning tea.

Super Easy Apricot Chicken

Hands up who likes a meal that uses only FOUR ingredients and has virtually ZERO prep time!

ME ME ME ME ME!!

Here you go, super easy Apricot Chicken for four hungry people:

Ingredients

  • 4 x Chicken Breasts
  • 2 x French Onion Soup Mix packs (40g each)
  • Plain flour for dusting
  • 3 x (400ml) tins of apricot nectar (or just puree up 3 x tins of apricots in juice taking a few apricots out of the 3rd tin otherwise it'll be too thick)

Method

  • Preheat oven to 180°C
  • Dust chicken breast with flour.  I just pop them and the flour into a plastic bag and shake. ;)
  • Pop into casserole dish.
  • Mix apricot nectar and French Onion Soup Mix together.
  • Pour mix over chicken breasts.
  • Turn chicken over to ensure it's all covered.
  • Pop lid on dish and cook in oven for about 45 mins.
